30/12/14 CHRISTMAS LEFTOVERS


Did you manage to use up all the leftovers from Christmas? I made a flan and frittata which cost pennies and tasted delicious.

I made the flan using leftover pastry from making sausage rolls and mince pies. In the flan went some chopped up turkey, ham and some sautéed leeks together with a couple of beaten eggs, milk, salt, pepper and nutmeg.

I also made a frittata which used up turkey, ham, bacon (from Christmas breakfast), leftover pigs in blankets, and whatever I could find in the veg drawer of the fridge which included, mushrooms, onion, spring onions and a red pepper. I fried this all together then poured in some beaten eggs and topped it off with some grated cheese, sliced tomatoes and mixed herbs. I put it into a hot oven for 15 minutes. I did think of taking some photos to post but unfortunately only thought about it once we'd eaten. It was delicious.

Now for the New Year, I have some leftover custard in the freezer. I think this would be delicious mixed in with some lemon curd and topped off with the left over double cream. Yum, yum...

02/10/14 Halloween

With Halloween just around the corner, what better than to have a lovely pumpkin carving, but what happens to that lovely orange flesh that's left over? Did you know that pumpkin is a good source of vitamins and minerals, it is also an extremely versatile vegetable that can be used for both savoury and sweet dishes.  I use it for soups, cakes, as a side veg and even dry or roast the seeds to make a tasty snack. If you do one thing different this Halloween, search the internet for pumpkin recipes and be prepared for a surprise.

APPLES
The trees are heaving with fruit at the moment.  In particular the apple tree on the path alongside Whites Field down to Jack and Jill Pre-school is a problem for the Parish Council as they have to tidy up the dropped fruit.  They would welcome villagers helping themselves to some apples to help reduce this problem.
